Crispy ready salted straight cut fries with Chateaubriand

For the fries

Prepare the crispy ready salted straight cut fries according to the cooking instructions.
For the sauce

Finely chop the shallot and sauté it a little in butter.

Then add the sliced chestnut mushrooms and shiitakes and sauté them briefly with salt and pepper.

Remove the half from the pan and then add dash of cognac into the pan.

Let simmer for a while and then add the cream.
For the Chateaubriand

Remove the Chateaubriand from the refrigerator at least half an hour in advance and season with salt and pepper.

Fry the Chateaubriand as desired

Place the Chateaubriand on your plate put some sauce over it and some more mushrooms and sliced spring onion.
