For the mashed potatoes

Prepare the pure mashed potatoes according to the cooking instructions.
For the meatballs

Mix the minced meat in a bowl with egg, finely chopped onion, garlic, breadcrumbs, salt, pepper and fresh parsley.

Form small meatballs from the mixture and set them aside.

Heat some neutral oil in another pan over medium heat. Fry the meatballs until golden brown on all sides.

Add the fried meatballs to the tomato sauce and simmer over low heat for about 15-20 minutes to allow the meatballs to cook and the flavors to blend.
For the sauce

Heat a little neutral oil in a large pan over medium heat. Fry the finely chopped onion and garlic until soft.

Add the diced tomatoes, tomato puree, sugar, dried oregano, salt and pepper. Let the sauce simmer over low heat while you prepare the meatballs.
