Prepare all your ingredients before you start cooking, as stir-frying happens quickly.

Heat the vegetable oil in a large wok or skillet over medium-high heat.

Add the minced garlic and grated ginger to the hot oil and stir-fry for about 30 seconds or until fragrant.

Add the sliced red bell peppers to the wok and stir-fry for 2-3 minutes until they begin to soften but are still crisp.

Add the snow peas to the wok and stir-fry for another 2 minutes until they turn bright green and remain crisp.

Add the edamame beans to the wok and stir-fry everything together for an additional 2-3 minutes until the beans are fully heated through.

Pour the soy sauce and oyster sauce over the vegetables in the wok and stir well to ensure everything is evenly coated.

Add the sliced scallions and stir-fry for another 1-2 minutes until they soften but are still vibrant green.

If you like it spicy, you can now add red pepper flakes or chili sauce to taste.
