Prepare the Sidewinders® fries according to the cooking instructions.

Start by making the dressing. In a bowl, mix together the cooked beans, avocado, blueberries, raspberries and halved cherry tomatoes.

In a separate bowl, whisk the eggs together with salt and pepper.

Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Pour half of the beaten egg mixture into the pan and spread the halved cherry tomatoes evenly over the egg mixture.

Cook the omelet until the edges are firm and the center is still slightly runny.

Fold the omelet in half and let it cook on low heat for another few minutes until completely cooked. Repeat these steps with the remaining egg mixture to make a second omelet.

While the omelettes are cooking, finish the dressing. Mix the extra virgin olive oil, balsamic vinegar, salt and pepper in the bowl with the beans, avocado and berries.

Once the omelets are done, place them on plates and spoon the dressing with beans, avocado, berries and tomatoes on top.

Garnish the omelets with fresh herbs such as chives or parsley, if desired.
