tomato paste |
400 grams |
peeled tomatoes |
800 grams |
tomato cubes |
700 grams |
passata |

big shallot |

Cut the shallot and sauté in olive oil

Crush the garlic and add to the pan

Tie the bay leaves and thyme together with kitchen rope and add it to the pan

Add 2 tablespoons of tomato paste

Add half a tablespoon of harissa

Stir and let it dry

Add the peeled tomatoes, tomato cubes and passata
Optional: add a dash of tabasco Habanero

Gently simmer for at least half an hour
Serving tip:

Serve on top of your fries and finish with some mozzarella
