Prepare the super crispy seasoned waffle fries according to the instructions.

Preheat the oven at 200°C.

Toast the pine nuts in a frying pan until golden. Don’t toast them too long, because they still need to go in the oven.

Wipe the portobellos clean with a piece of kitchen paper and remove the stalks.

Crush the garlic.

Finely slice the stalks and stir-fry with the garlic. Add the spinach. Continue to stir until the spinach has wilted. Then stir in the pine nuts.

Season with salt and pepper.

Place the portobellos with the open side upwards on a baking tray and fill with the spinach.
Tip: use a sheet of baking paper.

Top the portobellos with sliced goat’s cheese.

Sprinkle with olive oil and scatter with rosemary, salt and pepper.

Place the baking tray in the oven for 20 minutes until the cheese is coloured.
