Chop the garlic, shallot and chili pepper (without seeds) very finely.

Finely chop the parsley leaf, chives, oregano and thyme.

Mix the herbs with the olive oil, white wine vinegar, lemon juice, mustard, pepper, salt, cumin, fine shallot, garlic and chili pepper. Add white wine vinegar and olive oil, if desired, to taste. Allow to infuse.

Bake off scampi brochette and coat with the chimichurri.
